Jambalaya with a Kick

Jambalaya with a Kick is a spicy, flavorful dish that brings the taste of New Orleans to your table. This hearty recipe features a mix of andouille sausage, shrimp, and chicken, combined with rice, vegetables, and a blend of Cajun spices. It's a one-pot meal that's perfect for feeding a crowd or enjoying leftovers.

    Directions:

  1. 1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the sausage and cook until browned. Remove and set aside.
  2. 2. In the same pot, add the chicken and cook until browned on all sides. Remove and set aside.
  3. 3. Add the shrimp and cook until pink. Remove and set aside.
  4. 4. Add the onion, bell pepper, celery, and garlic to the pot. Sauté until softened, about 5 minutes.
  5. 5. Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.
  6. 6. Add the chicken broth, diced tomatoes, Cajun seasoning, paprika, thyme, cayenne pepper, salt, and pepper. Stir to combine.
  7. 7. Return the sausage and chicken to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked.
  8. 8. Stir in the shrimp and cook for an additional 5 minutes, until heated through.
  9. 9. Garnish with sliced green onions and chopped parsley before serving.
