Jambalaya with a Kick is a spicy, flavorful dish that brings the taste of New Orleans to your table. This hearty recipe features a mix of andouille sausage, shrimp, and chicken, combined with rice, vegetables, and a blend of Cajun spices. It's a one-pot meal that's perfect for feeding a crowd or enjoying leftovers.
Ingredients:
- 1 tablespoon olive oil
- 1 pound andouille sausage, sliced
- 1 pound chicken breast, diced
- 1 pound shrimp, peeled and deveined
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 2 cups long-grain rice
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Chopped parsley (for garnish)
Directions:
- 1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the sausage and cook until browned. Remove and set aside.
- 2. In the same pot, add the chicken and cook until browned on all sides. Remove and set aside.
- 3. Add the shrimp and cook until pink. Remove and set aside.
- 4. Add the onion, bell pepper, celery, and garlic to the pot. Sauté until softened, about 5 minutes.
- 5. Stir in the rice and cook for 2-3 minutes, allowing it to toast slightly.
- 6. Add the chicken broth, diced tomatoes, Cajun seasoning, paprika, thyme, cayenne pepper, salt, and pepper. Stir to combine.
- 7. Return the sausage and chicken to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked.
- 8. Stir in the shrimp and cook for an additional 5 minutes, until heated through.
- 9. Garnish with sliced green onions and chopped parsley before serving.
