Crispy Tofu and Rice

Crispy Tofu and Rice is a delightful and healthy dish that combines perfectly golden tofu with fluffy jasmine rice, accompanied by a medley of sautéed vegetables and a tangy soy glaze. This vegan-friendly recipe is packed with protein and flavor, making it a satisfying meal for any time of the day.

    Directions:

  1. 1. Cook the jasmine rice according to package instructions and set aside.
  2. 2. Cut the tofu into cubes and toss with cornstarch, salt, and pepper until evenly coated.
  3. 3. Heat vegetable oil in a pan over medium heat. Add tofu and cook until golden and crispy on all sides, about 7-10 minutes. Remove from the pan and set aside.
  4. 4. In the same pan, add sesame oil and sauté garlic until fragrant. Add the bell pepper, carrot, and zucchini, and cook until tender.
  5. 5. Return the tofu to the pan and add soy sauce. Toss everything together until well combined and heated through.
  6. 6. Serve the tofu and vegetables over jasmine rice, garnished with chopped green onions.
