Crispy Tofu and Rice
Crispy Tofu and Rice is a delightful and healthy dish that combines perfectly golden tofu with fluffy jasmine rice, accompanied by a medley of sautéed vegetables and a tangy soy glaze. This vegan-friendly recipe is packed with protein and flavor, making it a satisfying meal for any time of the day.
Ingredients:
- 1 block firm tofu, drained and pressed
- 1 cup jasmine rice
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon vegetable oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 zucchini, sliced
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- Salt and pepper to taste
Directions:
- 1. Cook the jasmine rice according to package instructions and set aside.
- 2. Cut the tofu into cubes and toss with cornstarch, salt, and pepper until evenly coated.
- 3. Heat vegetable oil in a pan over medium heat. Add tofu and cook until golden and crispy on all sides, about 7-10 minutes. Remove from the pan and set aside.
- 4. In the same pan, add sesame oil and sauté garlic until fragrant. Add the bell pepper, carrot, and zucchini, and cook until tender.
- 5. Return the tofu to the pan and add soy sauce. Toss everything together until well combined and heated through.
- 6. Serve the tofu and vegetables over jasmine rice, garnished with chopped green onions.
